Turkey meatballs with a small amount of sauce, are a great way to incorporate protein into your diet. The meatballs will give you protein-and served with a large salad, the veggies will fill you up. Here is my recipe for delicious, nutritious turkey meatballs. Start with the meatballs by combining the turkey, garlic, parmesan cheese, parsley, salt and pepper. Form into meatballs using the ice cream scoop. Brown on all sides in the nonstick pan in 1 tbsp. olive oil over medium heat. While the meatballs are cooking, begin the sauce. Heat 2 tbsp. olive oil in the pot over medium heat. Add in the garlic, salt and pepper until sizzling-don’t let it burn! Add the tomatoes and crush with the potato masher. Simmer the entire sauce on low for 20 minutes. After the meatballs are finished, plate them and add a small amount of the tomato sauce to each one. Add fresh basil and salt and pepper to taste.
