Irish soda bread is a special treat around St. Patrick’s Day, but in Ireland it’s a regular part of the diet. When most Americans think of Irish soda bread, they think of a bread mixture containing raisins or some other type of dried fruit. The Irish, however, prefer a combination of white and whole wheat flour, without the fruit. Try this authentic recipe for traditional Irish soda bread this St. Patrick’s Day. Step 1 Sift the flour, bicarbonate of soda and salt in a bowl. Add the wholewheat flour and rub in the butter. Step 2 Make a well or hole in the center of the mixture, add the beaten egg, and pour almost all of the buttermilk into the bowl. Mix to a loose dough, adding more milk if necessary. Step 3 Turn the dough on to a floured bread board and knead lightly. Turn the smooth side up, flatten the dough to a slightly domed circle, and make the shape of a cross on the top of the cake with a floured knife. This action allows the bread to stretch and expand as it rises in the oven.
