How Do You Make Traditional Banana Nut Muffins?
Warm and rich, these traditional banana nut muffins are satisfying and easy to make. Follow this recipe and you will be curled up with a book and a warm muffin in no time at all. Get your ingredients together: * 2 cups flour * 1 tablespoon baking powder * 1/2 teaspoon baking soda * 1/2 teaspoon salt * 1 teaspoon cinnamon * 2 eggs * 1 cup milk * 1/2 cup sugar * 1/2 cup vegetable oil or 1 stick butter * 1 teaspoon vanilla (real, not imitation) * 2 ripe bananas, mashed * 1 cup chopped walnuts Place an oven rack in the center and preheat oven to 400. Combine flour, baking powder, baking soda, cinnamon, and salt in a large mixing bowl. Set aside. Combine sugar and butter/oil and mix until blended. Add eggs, milk, vanilla, bananas and walnuts and mix just until the ingredients are blended — do not over-mix! There will be a few little lumps, but that is okay. Fill muffin cups within 1/2 inch of the rim. Bake for 20 – 25 minutes, or until a toothpick inserted into the middle comes out clean.
