Get your ingredients together: * 2 cups flour * 1 tablespoon baking powder * 1/2 teaspoon baking soda * 1/2 teaspoon salt * 1 teaspoon cinnamon * 2 eggs * 1 cup milk * 1/2 cup sugar * 1/2 cup vegetable oil or 1 stick butter * 1 teaspoon vanilla (real, not imitation) * 2 ripe bananas, mashed * 1 cup chopped walnuts Place an oven rack in the center and preheat oven to 400. Combine flour, baking powder, baking soda, cinnamon, and salt in a large mixing bowl. Set aside. Combine sugar and butter/oil and mix until blended. Add eggs, milk, vanilla, bananas and walnuts and mix just until the ingredients are blended — do not over-mix! There will be a few little lumps, but that is okay.
