Tostones (pronounced Toast-ohhh-neighs) are a long traditional plate from Puerto Rico, Cuba and Dominican Republic. They can be eaten alone with salt only, with tomato sauce (ketchup), mayoketchup or my favorite with garlic sauce, wich tastes tremendously. First prepare the garlic sauce. Heat oven to 325. Rub head of garlic till thoroughly coated in olive oil, husk and all. In a small bake proof dish place head of garlic in 2 tablespoons of olive oil. Bake for 15 minutes. Allow to cool. Pop garlic out of husks and place in bake dish once again. Pour rest of oil into garlic mix. Mash with fork till blended with oil. Add salt. Next, slice plantains length wise a few times to score skin. Peel off. Remove any residual skin with knife. Cut plantain into diagonal chunks about 3/4″ to 1″ wide. Heat oil in pot for frying. You are ready to add the sliced plantains when a few drops of water begin to sizzle when place on the oil. Add a few of the sliced plaintains, just enough to float the surfac
