I learned to fry green plantains/burro bananas, called tostones through the Cuban culture. They also serve fufĂș or mashed plantains, mariquitas/chicharitas or plantain chips, but tostones is their favorite. They are prepared by cutting, peeling and lightly frying the green fruits, then crushing them, and frying them again. Before eating Cuban food, I had not imagined eating fried green plantains or bananas, and I never heard about it in The Bahamas. We boil them. However, we do fry ripe plantains and eat ripe bananas just as they do. Now that I think about it, it is like frying potato chips or French fries. Potatoes are frequently peeled and given the shape and thickness that the cook wants before frying it. I enjoy tostones most of all the dishes.
