There are so many reasons for the existence of great red sauce. Pasta, soups, eggplant and chicken dishes are just a few. There are prepared versions which may have preservatives, additives, and sugar all of which ultimately change the flavor and chemistry of the sauce. Peel your tomatoes (you may blend them or put them in a food processor then strain the sauce out from the left behind skins) Next you should combine the sauce you have extracted with all of the ingredients, note the onion should be peeled but remain whole so you can remove it after it is cooked.
