This is a super easy and tasty chocolate cake. Just do everything in one pan. No muss no fuss. It tastes really rich without being fattening and you can make it even better by topping with chocolate icing. It’s also very nice served with a raspberry sauce and some whipped cream on top. I found this recipe several years ago in Prevention magazine. It had been in the family of the person who submitted it since the 1950’s. Preheat your oven to 350’F Sift flour, sugar, cocoa, baking soda, and salt into an ungreased 8×8 inch glass baking dish. You can also use an aluminum pan if desired. Make 3 depressions in the dry ingredients. Pour oil into one, vinegar into one, and vanilla into one. Pour water over all the ingredients and mix thoroughly with a fork to moisten all the dry ingredients. Bake 30 minutes or until a toothpick inserted in the center comes out clean. This will yield 9 squares.
