This is the easiest, tastiest lemon pound cake you can make. It tastes much better – and is much cheaper – than the $3 per slice versions found in overpriced coffee shops. Preheat your oven to 350 degrees Fahrenheit. Grease inside of Bundt or tube pan with cooking spray or wipe with a paper towel dipped in cooking oil. Lightly sprinkle 2-3 tbsp. of the cake mix to completely cover the inside of the pan with a light dusting. Combine the remaining cake mix with the 1/3 c. oil, 1/2 c. water, 4 eggs, box of lemon pudding mix, and 1 tsp. lemon extract (or juice) in a large bowl. Mix by hand or with a mixer until combined.
