I made this for my family and they loved it. They thought I slaved over the stove all day. I like recipes that are easy and healthy. This is one of them. What you will need is 2T oil (Canola is the best); 2 T chopped onion; 1/12 cups white rice; 2 cups of chicken broth; 1 cup salsa (any flavor you prefer) and 1/2 – 1 pound of browned chopped chicken. Brown the onions first and then add the chicken broth, rice, salsa and chicken. When using white rice always use Basmati. It is a whole grain and it has a wonderful flavor. If you use pre-boiled rice the nutrients are gone in the processing. Let the dish simmer for approximately 20 minutes. Watch that time because white rice cooks fast and it can easily stick to the pan if you run over 20 minutes. There you have it. Protein & Carbohydrates. Add a green salad or a green vegetable and you have a whole meal. It is great for leftovers. Enjoy!
