Casali Rum-Kokos get their round shape from a slow and careful coating with chocolate – that is slow drizzling of liquid chocolate layer for layer – a process which takes several hours. The final part of the process is a so-called shiny layer, which not only gives the product a particularly appetising look, but is also a protective layer which meaning the chocolate will not melt in your fingers as quickly. For this appetising shine on confectionery schellac and gummi arabicum are traditionally used, both of which are purely vegetable.
