This ice cream cake is simple and turns out so beautifully it will dazzle your guests! Take your ice cream out of the freezer and let it soften a bit. Unwrap and lay four rectangular ice cream sandwiches so they lay side by side to make a rectangle. Take both pints of ice cream out of the containers and with the knife cut each into 4 circles. Place the circles of ice cream on the sandwiches, first one flavor, then the other on top of the first flavor. Place your next four ice cream sandwiches on top of the ice cream- to match the direction of the first four. Squish down a little being careful not to compromise the integrity of the sandwiches, but get that center ice cream out close to the edge. If it’s getting melty, put the “cake” in the freezer. Put the chocolate chips into a small bowl. Heat up the whipping cream or half and half in your saucepan until just before it boils.
