Thai peanut sauce is a wonderful, authentic sauce for Thai cuisine. It goes great over stir fry, rice, chicken, pork, and just about any Asian dish you can imagine. It also makes a great topping for spring rolls. Try marinating your barbecue meat in it. It gives a unique flavor to steak, chicken, and shrimp. It is remarkably easy to make. Here is how. Place peanut butter in a microwave-safe bowl. Cover with a paper towel to keep microwave clean and heat for 30 seconds to soften. Do not melt. In a medium bowl, mix the peanut butter, coconut milk, lime juice, water, soy or tamari sauce, hot sauce, ginger, and garlic. Mix the ingredients very well. Using a whisk will help make a consistent sauce. Use immediately or refrigerate for up to 5 days in a plastic or glass container. Stir or shake before use as separation may occur over time.
