How Do You Make Tempeh?
Tempeh is fermented cooked soy beans, and like tofu, it’s a healthy source of protein. It has been a staple in Indonesia for hundreds of years and has become increasingly popular worldwide. Nutritional benefits one can expect from tempeh are all the essential amino acids, loads of phytochemicals like isoflavins, and fiber. Step 1 Buy a package of shelled soybeans. If you use whole soybeans you will need to dehull them by hand. Step 2 To dehull the soybeans, soak them in water for six to 18 hours. Stir the beans to make the hulls rise to the surface. As the hulls fall off, continuously strain out the water and hulls until all of them have been removed. Step 3 Place the dehulled beans in a cooking pot and add just enough to water to cover the beans. Add three tablespoons of vinegar and cook for 30 minutes on medium heat Step 4 Drain the water and dry the beans by allowing to remain cooking for a few more minutes. When the beans are dry, remove from the heat and cool down to 95 degrees F.
