How Do You Make Tasty, Quick And Easy Italian Wedding Soup?
I never tasted Italian Wedding Soup until last year. When I did, I was hooked! What I tried was from a can and I thought, “I can make it better than this!” This is one of the tastiest soups I’ve ever eaten! The sausage, spinach and tomatoes combine to be very rich and flavorful. And the addition of the little, tiny pasta…well, who doesn’t like pasta! Very easy to make and the whole family will love it! This recipe is easily 8-10 servings. If your gathering calls for a smaller amount, you can cut it in half or make the whole recipe and freeze half … you will want more sooner than later! Place water in large sauce pan over high heat. Bring to a boil. Add bullion cubes to boiling water and stir to dissolve. Add onion, spinach, tomato, basil, oregano, and garlic. Simmer over medium low heat for approximately one hour. Pinch sausage off into small balls and add to soup. Simmer approximately 1 more hour. Add pasta…a little at a time. (I added too much once) Let simmer another 30 minute
