Or, put the red wine vinegar in another container and place the tarragon sprigs into the empty red wine vinegar bottle. Add garlic, lemon peel and peppercorns to the jar/bottle. Fill/refill the jar/bottle with the red wine vinegar. Use the funnel if necessary. Cover the jar/bottle, and place in a cool place for at least one month.
