Definitely for the lemon lovers. The dough can be frozen for later use. Cream together the butter and sugar. Beat in the egg, lemon juice, and lemon rind. Mix together, in another bowl, the flour, baking soda, and salt. Add the flour mixture to the butter mixture and stir until blended. Divide dough into two equal portions. On a lightly floured board, roll each portion into a log. Wrap the logs in plastic wrap and chill until firm, or freeze for later use. When ready to bake, heat oven to 400 degrees. Cut logs into 1/8 inch slices and bake, on unbuttered pans, for approximately 6 minutes. Cool on racks. Enjoy!
