How Do You Make Sweet Potato Biscuits?
I absolutely love sweet potatoes and these biscuits have such a great flavor! I love to bake these on a cool day in autumn. Mix together the flour, baking powder, and the salt, preferably with a whisk. With a pastry blender or 2 sharp knives, mix in the butter until crumbly. In a separate bowl, stir together the sweet potato and the buttermilk. Then add to the dry ingredients, stirring until moistened. Turn the dough onto a lightly floured surface. Knead until smooth and elastic, about 4-6 times. Roll the dough to 1/2 inch thickness. Cut the dough with a biscuit cutter and place the biscuits on a lightly greased baking sheet. Bake at 425 degrees for 10-15 minutes or until the biscuits are a golden brown.
