• Preheat the wok and add the oil to heat. • Cut the chicken into small cubes. Place the cubes into the heated wok and stir-fry on high for 10 minutes. Keep tossing so that the chicken cooks through and goes golden. • Prepare the mango by peeling and slicing it. Remember that there is a pit in the middle, so take care cutting. • Add the mango slices to the wok, along with the garlic, sprouts and leeks. Stir-fry until softened, about 2 – 3 minutes. Remove briefly from heat. • Make the flavoring sauce. Mix together the mango juice, vinegar, honey, ketchup and cornstarch. • Place the stir-fry back on the heat and pour over the sauce.
