How Do You Make Summer Grilled Potatoes?
Recipes are only what you make of them. Adding a great side dish to any main dish will bring the summer meal together. Potatoes grilled or otherwise are a grand choice. Wash the potatoes leaving skin in tact and cut into quarters. Place potatoes and water in a microwave safe bowl and cover with a plastic plate to trap steam. Cook the potatoes on high for about 10 minutes until easy to poke with a fork but not falling apart. Stir them with a slotted spoon every 5 minutes. Drain the potatoes and lay out on a paper towel to dry. In a large mixing bowl, stir together mayonnaise, wine, rosemary, and garlic powder. Throw in drained potatoes and toss to coat. Leave the potatoes in marinate for an hour in the refrigerator. Soak the wooden skewers in water for 20 minutes to keep from burning and when the water cooks off the skewers will shrink allowing for easy removal of potatoes.
