When you prepare this apple butter and give it as a gift to friends you are giving them something that not only tastes great but is also full of antioxidants, vitamin A, beta-carotene and tons of fiber. Combine pumpkin, apple juice, spices and stevia in a large saucepan. Stir well. Bring mixture to a boil. Reduce heat and simmer for 30 minutes or until thickened. Stir frequently. Transfer to sterile, glass containers and chill in the refrigerator for two hours.
