How Do You Make Sugar-Free Pumpkin Apple Butter?
You don’t have to wait until Halloween or Thanksgiving to enjoy healthy and delicious pumpkins. Pumpkins are actually in season from September until March. When you prepare this apple butter and give it as a gift to friends you are giving them something that not only tastes great but is also full of antioxidants, vitamin A, beta-carotene and tons of fiber. Combine pumpkin, apple juice, spices and stevia in a large saucepan. Stir well. Bring mixture to a boil. Reduce heat and simmer for 30 minutes or until thickened. Stir frequently. Transfer to sterile, glass containers and chill in the refrigerator for two hours.
