This recipe for No Bake Cookies has been used by my family for years. It has just been changed up a bit to make them sugar free. They are great for any diabetic in your family! Mix together the Splenda, cocoa, oleo, and evaporated milk in a pan. Bring to a rolling boil while stirring it constantly. Boil for 1 minute and then set off of heat. Add in your vanilla and peanut butter. I use Simply Jif peanut butter. Stir until mixed well. Add in the oatmeal slowly. Keep going into it is very thick. You may need a little more or a little less than the 3 cups the recipe calls for originally. Drop your cookies by the spoonful onto waxed paper. Let them sit until cool. They will harden as they sit, but this sugar free version stays a little soft. Make sure when you move them to a bowl that you put wax paper between layers so they don’t stick together.
