How do you make suet pudding with Atora suet?
1lb Flour 6oz Suet, (Atora or Atora Light) Pinch salt Mix the dry ingredients and add sufficient water to make a stiff dough. Take two thirds of the dough and use it to line a greased 1½ pint basin. Fill with fruit, e.g. mixture of blackberries and apples (sliced) sprinkle with 1-2 tablespoons of sugar (depending on sweetness of apples) Using other third of dough roll out and make a lid for the pudding. Put a circle of greaseproof paper on top and cover closely with two layers of foil. Put in a steamer or bain-marie and steam for 2 – 3 hours, alternatively cook in a pressure cooker for 45 mins. Remove foil and paper cover. Invert basin onto a large plate and serve with custard. Take care that the plate is large enough to hold the juices which will pour out when you cut into the pudding.
