Slice the side lengthwise into two pieces and trim the edges and ends for uniform filets. Turn the pieces over so that the skin side is faced up, the side you are going to spread the filling on. This will give you a nicer presentation of your dish. Season the Salmon with salt and freshly ground pepper and a squeeze of lemon. Spread your filling on each side. I’ll give you some examples in the tip section, evenly over the two pieces. See the photo. Starting at the wider end roll the Salmon up and finish with the tail piece tucked under.
