Stuffed chicken breast and stuffed pork chops are a favorite here at my house. They are not only delicious, but they are very easy to make! Make your stuffing according to package directions and set aside. Cut your chicken breasts in half so that you have eight pieces of chicken all the same approximate size. You are not cutting them down the center – you have to turn the breast on the side and slice it as if you were cutting them into cutlets. Sprinkle all with salt, pepper & whatever other seasonings you usually use on chicken. Spray your baking dish with non-stick cooking spray. Put four pieces of the chicken in the baking dish. If you are making stuffed pork chops, put four pork chops in the baking dish. (Season these as well!) Scoop a heaping spoon full of stuffing onto each piece of chicken or pork, enough to cover the entire piece. Flatten it a bit with your spoon.
