Yes you can make this with a package of jello and some whipping cream but for an authentic, flavourful recipe, try this. Crush and sieve your berries until you have one cup of juice. Set aside. Sprinkle the gelatine into the 1/2 cup cold water and soak for one minute. add the 1/2 cup boiling water and stir slowly until the gelatine is completely dissolved. Stir the strawberry juice into the gelatine mixture. Chill until it begins to thicken – about 1/2 way to the jelled form. Whip the whipping cream until it is stiff. FOLD the whipped cream into the mixture. No stirring. place this mixture into a mold or individual serving glasses and return to chill until it is firm. Enjoy!
