Steak and Kidney pie is delicious. It’s somewhat of an acquired taste, but unlike haggis, it’s more palatable. Here’s how you make it. Wash the kidneys, removing the membrane. Cut them up into small cubes and immerse them in salt water for about an hour. Drain the kidneys and wash them with cold water. Then bring the pot to boiling and drain. Cut the beef into cubes as well and cover the cubes up with the flour. Brown beef and kidneys in a frying pan and add onions and mushrooms. Add water to cover and simmer until tender. This will take about 1-2hrs. Once it has thickened, place the beef and kidneys into a shallow pan, and cover with crushed crackers. Bake for 20 minutes or until cracker crust is golden brown. Remove from oven and let it cool before serving.
