Quick easy meal for any night of the week. This is a vegetarian friendly recipe as well. Ingredients: 2 c. cooked browned rice 1/2 c. quick cooking oats 1 onion, chopped 2 cloves garlic, minced 1/3 c. panko crumbs or breadcrumbs 2 tbsp flour 1/3 c. milk or soy milk 1 egg 1 tbsp dried basil cayenne pepper 1 tsp dried oregano Pre-Heat oven to 400 degrees. In a large bowl mix together the cooked brown rice, oats. Add the egg and milk. Blend well. Add panko crumbs (or breadcrumbs). Now add all remaining ingredients. Mix well. Spray a baking sheet with some non-stick cooking spray. Using a tablespoon, make meatballs out of your rice mixture. Place meatballs on the cooking sheet. Before placing in the oven, spray some of the cooking spray on each of the meatballs. Bake for about 20-30 minutes. You can also fry your meatballs in a large pan on medium high heat. Add some olive oil (or oil of preference) into the pan and cook for about 10-15 minutes turning every five minutes. ENJOY!
