Hot and spicy buffalo wings and steaming hot chili are both football season foods. What better way to celebrate NFL Monday Night Football than combining two great foods into one: Buffalo Chicken Chili. Garnish with corn chips, sour cream and some tex-mex, cheddar or blue cheese and dinner is served right before the game starts. Heat olive oil and butter in a large stock pot over a medium-high heat. Place chicken in the pot. Cook and stir for approximately 10 minutes, until chicken is no longer pink. Stir in the carrot, onion, celery, garlic, chili powder, cumin, paprika, and salt and pepper. Cook while stirring for about 10 minutes until vegetables have softened. Stir in the hot sauce, tomato sauce, crushed tomatoes, and white and red kidney beans. Bring to a boil, and simmer over medium-low heat about 1 hour. Serve with corn chips, sour cream and shredded tex-mex, cheddar or blue cheese.
