Our spaghetti squash grew in abundance and we have had this delicious casserole at least once a week for the past couple of months. It is easy to prepare and even the kids will love it. Enjoy! Make sure that you start out with a clean and dry surface. Preheat the oven to 375. Slice the spaghetti squash in half lengthwise and get rid of the seeds. Butter a large cooking tray and place the squash, face down, on the tray and bake for 35 minutes. Let the squash cool and scoop at the flesh from the inside. While the squash bakes, sauté the garlic and the onions. Add mushrooms and herbs and sprinkle with salt and pepper. Add tomatoes once the onions are tender. Cook until most of the liquids have evaporated. Combine the rest of the ingredients. Pour into a large, buttered, baking dish. Grate lots of parmesan cheese on the top and bake at 350 for about 50-6
