How Do You Make Southern Style Pickled Beets?
Love those pickled beets, but hate the high price of “specialty” foods? Forget the fancy labels and make your own! Here is super easy recipe that gives you all the flavor of Grandma’s pickled beets year round. Open your 15 ounce cans of beets, drain and reserve beet juice. Put the beets, (which are already cooked), into the jars. Try and get equal amounts into the two jars, leaving space for your pickling liquid. In large pot, mix together your beet juice, two cups of white vinegar, a tablespoon of each spice and 4 cups granulated sugar, stir well. Bring to a boil over high heat, stirring every few minutes. Turn down heat and simmer for 30 minutes. Keep stirring to make sure that sugar is breaking down. Pour hot liquid into jars, covering your beets. Put lids on jars and tighten down just enough to close. Let sit on kitchen counter for three or four hours to cool. Tighten down the lids, place in refrigerator. Let beets pickle for at least two weeks before you open them. Kept in fridge,
