You haven’t had good mashed potatoes until you’ve had sour cream mashed potatoes! Easy to make, these creamy potatoes can be made ahead of time and refrigerated until needed, or made and served immediately. This recipe is good to serve when feeding a large group of people, as it will fill a 9 x 13” dish. Mash your cooked potatoes until they are very smooth. There shouldn’t be any chunks of potatoes. Mix in the 12 oz of cream cheese. This will work best if softened. Stir well. Then mix in the 1.5 cups of sour cream. Again stir well. Mix in 1-2 eggs and beat entire mixture well. Add a little bit of butter, to appearance. Add milk, if necessary to make the potatoes creamy. Add chopped onion to the top of the potatoes, if desired. If needed, refrigerate overnight. When ready, bake at 325 degrees for one to one and a half hours. Keep your eye on the potatoes; you don’t want them to burn!
