How Do You Make Sospiri Or Sardinian Almond Candies Called “Gueffus”?
These delicious Sardinian sweets called gueffus are similar to the sospiri of Ozieri. They are typical of the Campidano area. They are balls made with a dough consisting of almond flour, sugar, lemon and orange flower water. They are usually individually wrapped in pink, white or blue tissue paper. Soak the almonds in hot water and peel them. Grate the almonds and the lemon peel. In a saucepan, melt the sugar (adding a couple of tablespoons of orange flower water) over a low flame, then mix quickly together. . Form balls (like you would do to make meat balls)and roll them in the sugar. Once dry wrap in tissue-paper and arrange them on a nice round tray or basket. To prepare the tissue paper: cut colored tissue paper or curl paper into squares and make fringes on the sides with scissors. Place the almond ball in the middle and roll the ends of the paper like you would do to wrap a candy.
