How Do You Make Snow On The Mountain Cookies?
Snow on the Mountain Cookies are not only pretty to look at but they are wonderful to eat. Combine the 2 cups granulated sugar, 4 large eggs and 2 teaspoons vanilla extract in a large bowl. Beat with an electric mixer on high speed until well blended. Add the 8 tablespoons melted butter and mix well. Sift the 2-1/2 cups flour, 1/2 cups plus 1 tablespoon cocoa powder, 2 teaspoons baking powder and 1/2 teaspoon salt in an another bowl. Add this to the flour mixture. Stir in the pecans, and mix well again. Cover and chill the dough for about 2 hours. Preheat oven to 350 degrees. Shape the dough into 1 inch balls. Roll in the confectioners sugar. Place 2 inches apart on an ungreased baking sheet. Bake until just browned, about 10 minutes. Remove from baking sheet and cool. Do not over bake; cookies should be chewy.
