How Do You Make Smoked Salmon Mousse Canapés?
• Place the salmon, heavy cream, and white pepper into the blender. Blend the ingredients into a fine puree. • Add the cream cheese to the blender and continue blending. • Use a spoon to transfer the puree from the blender to a piping bag and set the bag aside for now. If a piping bag isn’t available, a sandwich baggie can work. • Use a vegetable peeler to remove the skin off of the cucumbers horizontally (the long way). Create a strip pattern by leaving about a centimeter between each skin part. • Cut good sized chunks out of the cucumbers. • Scoop out the middle section of the cucumber chunks with a melon ball maker. Toss away the flesh or the part you scooped out. • Use the piping bag to squirt some of the salmon puree into the cucumber holes. If a sandwich baggie is used, cut a hole in the corner of the bag. • Add a dab of caviar to each cucumber. Place a sprig of dill on each set of caviar for the final touch.
