If you like your iced tea sweetened, this is the way to go. By having a liquid syrup, you can sweeten the tea exactly to your liking, with the added benefit that others can sweeten their glass of tea more or less to their liking. This recipe includes adding any number of herbs or flavorings to the syrup. Place a medium sized sauce pot on a stove top burner. Measure two cup of sugar and place in the sauce pot. Measure 1 ½ cups of water and add to the sauce pot. Turn the stove burner to medium low heat and stir the contents of the pot until the sugar totally dissolves in the water. Continue heating until the mixture just begins to boil, stirring occasionally. Add one full tablespoon of your selected herb (mint or lavender petals) to the sugar solution and then turn off the burner. Let the contents of the pot steep for at least ten minutes. Strain the syrup through a strainer into a container that can be sealed. Your flavored syrup is now ready to be used.
