Semolina pudding is very famous in India and is known as sooji halwa.It is a delight on every occasion and kids love it.Semolina is said to be very healthy and creamy.This pudding does not take much time either and can be made with very less ingredients.Here is how you can make Semolina pudding or sooji halwa. Take a small skillet or wok.Add 3 tsp of melted butter and let it heat.Lower the heat and add a cup of semolina to stir fry.The semolina should turn a little golden in color and a bit roasted.It should not turn too brown.Turn off the gas.Keep aside and let it cool. Chop 1/4 cup of almonds and cashews.They are optional.Crush a cardamom for flavor. Now,in the same wok or skillet,add 4 cups of water after turning on the gas.Add a cup of sugar and let the mixture come to a boil.
