How Do You Make Seasoned Roasted Chicken?
• Preheat oven to 425 degrees for 30 minutes and then reduce to 375 degrees • Spray a roasting pan with nonstick cooking pan. • Spray roasting rack with nonstick cooking spray. Place rack inside roasting pan. • Remove giblets, heart, gizzard from chicken cavity, if required. • Rinse chicken and pat dry. • Place chicken on roasting rack. • Rub chicken with olive oil. Figure about 2 tablespoons, depending on personal taste and the size of the chicken. • Season liberally with Montreal Chicken seasoning or other favorite seasoning mix.
