Hungry for enchiladas but don’t want to take the time to make them? Well look no further. Here is a simpler way to make them without having to role each tortilla individually. Boil chicken in a large pot. Next, heat the can of cream of chicken soup, half can of water and green chile in a separate pan. When chicken is cooked, dice it up into smaller pieces. Add chicken to soup mix. Heat until you get a rolling boil. In an 8×10 pan, cover the bottom with a layer of tortilla chips. About one chip thick. Next, pour a thin layer of soup mixture over the tortilla chips. Making sure that all chips are covered. Then cover layer with shredded cheese. Repeat steps 5 through 7 until all soup mix has been used. Then, cover with foil and cook for about 30 min. or until cheese is melted in the center, at 350.
