Spinach is a great tasting and very healthy vegetable. My personal preference is usually to serve it fresh, such as in a salad. I also like chopped spinach in other dishes, such as quiche. I know that many others like it, but cooked spinach, on its own, however, is not usually something that I want to eat. I found and really liked this recipe, however, which dresses up spinach with red pepper, onion and garlic. The result was a very quick, tasty, easy to make, and pretty dish. I was pleasantly surprised with this healthy but very enjoyable vegetable side dish. This is a great way to add some of those greens to your diet. I hope you like it as much as I do. Although this step is optional, I usually “de-stem” and very coarsely chop the spinach. In the large skillet, heat the oil and, then, sauté the red pepper for 1 minute. Add the onion and garlic and sauté about 1-2 minutes longer (until peppers are tender). Add the spinach, salt, pepper, and sugar to the skillet and cook a short time
