This quiche is easy to throw together and can even be assembled the night before. It makes a wonderful breakfast, lunch or dinner meal. It’s a perfect to dish to serve your overnight holiday guests. You can substitute the sausage with leftover turkey or ham. Preheat oven to 425 degrees and pre-bake empty pie shell in pie plate for 3 minutes. Melt butter in a skillet. Add the green pepper and onion to the pan. Cook until onion is tender. Add frozen spinach and cook until warmed through. Set aside and cool. In a large bowl, whisk together eggs and milk. Stir in veggie mixture and sausage. Stir in seasonings and cheese. Pour into pie plate. Bake at 425 degrees for 5-10 minutes, until crust edges are browned. Remove from oven and cover edges with tin foil. Put back in oven and back for 30-40 minutes, until a knife inserted in the center comes out clean. Let sit for at least 5 minutes before cutting. Serve and enjoy!
