I don’t know about the batter part, as I’ve always made it just dredging the chicken and frying it. 3 tablespoons flour 1/2 teaspoon five-spice powder 1 1/2 teaspoon sea slat 1 teaspoon pepper 1 1/2 lb. chicken breasts cut into thin strips 1/3 cup Peanut oil 2 lbs Asian greens, mixed 1/2 cup oyster sauce Combine the flour, five-spice powder, salt and pepper in a bowl. Toss the chicken strips in the flour until well coated. Heat 1/4 cup of the oil in a frying pan over medium-high heat. Add the chicken in three batches and cook, turning until browned. Drain on crumpled paper towels and keep warm. Heat the remaining oil and cook the mixed Asian greens over medium high heat for 1-2 minutes. Add the oyster sauce and toss through. Serve the chicken with the greens. Add some steamed jasmine rice if desired.
