How Do You Make Ruby Tuesday Potato Cheese Soup?
Ruby Tuesday opened up on a university campus in Knoxville, Tennessee in 1972. The Potato Cheese Soup was one of the most popular items on the menu. Peel and chop the potatoes into small bite size pieces. Make sure your onion and celery are minced. Make sure your carrots are grated not shredded. Place the potatoes, chicken stock, onion, celery, carrots and vinegar into a saucepan at medium heat and bring to a boil. Cover and simmer for 20 minutes. In a bowl, whisk the flour and milk together. Add the saucepan with vegetables to the mixture. Place the pan back uncovered and simmer until soup is thickened about 5 to 8 minutes. Add the cheddar cheese to the mixture and simmer until it melts. Serve the soup in bowls and divide and top the soup with the remainder of cheddar cheese, monterey jack cheese and bacon and green onion.
