One of the advantages of making your own rock candy is the versatility of the recipe. This easy-to-prepare confection is made using corn syrup. But you can substitute any other flavored syrup, like maple or sorghum, or even honey or molasses, to make 2 lbs. of delicious old-fashioned candy. Pour the confectioner’s sugar into a plastic bag and set it aside. Cover the interior surface of the baking pan with aluminum foil. Use margarine or butter to grease it very well. Place the water, corn syrup and granulated sugar into a large saucepan and blend thoroughly. Bring the pan to a boil over medium heat while stirring constantly.
