How Do You Make Roasted Vegetable Lasagna?
Lasagna is a GREAT Italian Classic, which doesn’t take a lot of skill to prepare. Follow a few basic steps and you will have a healthy, delicious meal! Preheat Oven! Preheat oven to 425ºF. Prepare to Bake! In roasting pan, combine vegetables and garlic with olive oil. Bake until vegetables become tender, stir occasionally, approximately 20 – 25 minutes. Use Food Processor! Place half of the vegetables, salt and pepper, and 1/2 cup water in food processor and process until smooth. Place 1/2 cup of the vegetable puree into the bottom of a baking dish. Place Noodels in Baking Dish! Place 2 noodles over puree. Top with 1/2 cup of purée, 1/2 of remaining vegetables, 2 tablespoons of Parmesan cheese and 1/4 cup of mozzarella cheese. Repeat layers and then top it off with the remaining noodles, puree and cheese. Bake and Serve! Bake until bubbly, approximately 40 – 45 minutes. Then serve and enjoy!
