I was low on food the other night and was desperate for something tasty to make as a side for my family. I had a few baking potatoes and garlic in my pantry. I always keep olive oil and kosher salt on hand and came up with this very easy, tasty, and crowd pleasing side. It is so easy you can make it with any protein and any night of the week.
