Rice Stuffed Cornish Hens with Parmesan Cheese is a recipe that has a little Italian flare. Follow these easy steps. In 3 quart saucepan boil rice, green peppers, onions and bouillon in approx. 1+1/3 cups water until all water is absorbed by rice, 20 minutes. Add more water to rice if needed. Rinse and dry hens with paper towels. Stuff with rice mixture. Place stuffed hens in baking or roasting pan. Top hens with melted butter, garlic salt and pepper to taste. Bake in preheated oven 350 degrees for one hour, basting twice. Sprinkle with parmesan cheese and bake till brown.
