Rice and Beans is a delicious, healthy, and budget friendly meal. This recipe can feed a family for only a few dollars, and beans are a healthy and inexpensive source of protein. This recipe is vegetarian, but will satisfy meat eaters as well as it is hearty and full of flavor. Rice and Beans make an excellent main dish or side dish. For added variety, any other canned bean can be substituted, as well as dried beans which have been soaked and cooked. In a large saucepan, heat olive oil over medium-high heat.
