Springtime is near and Refreshing Lemon Bars always put me in a sunny mood. This was a spring and summer favorite of mine when I was a child. My mom always made these at Easter time. Cool and refreshing! Guaranteed to put a smile on your face! Beat the butter with an electric mixer on high until smooth. Add the vanilla and 1/4 cup of the sugar. Beat until mixed well. Mix in the one cup flour until all crumbly. Press into an ungreased 8x8x2 baking pan and bake at 350 degrees for 15 minutes or until golden brown. While the bottom is baking, mix eggs, the rest of the sugar, the 2 tablespoons of flour, the lemon peel, the lemon juice, and the baking powder until mixed well. Pour over the hot baked layer. Bake at 350 degrees for 20 more minutes or until slightly browned around the edges and the middle is firm. Cool on a wire rack and then cover with sifted powdered sugar. Cut into bars and enjoy!
