Seed the cucumber by using the tip of a spooon to scrape out the seeds. Finely dice or grate the entire cucumber. In a bowl, combine 8 oz. of plain yogurt and add the diced cucumber to it. Stir to combine. Next, remove the paper from the garlic clove and finely mince the clove of garlic and add it to the bowl. Squeeze in the juice of 1/2 of the lemon. Be careful not to let any seeds fall in. Add the dried parsley. Stir to combine all ingredients. Taste your tzatziki and add salt and pepper to taste.
