How Do You Make Refreshing Cucumber Yogurt Sauce (Tzatziki)?
Nothing is such a staple to Mediterranean food as Tzatziki. This yogurt sauce is great to dip veggies in, put on falafel, top delicious gyros, or dip warm home made pita bread into it. Tzatziki is very versatile and very delicious. Make a large batch to keep in the refrigerator for up to a week. Peel your cucumber with a vegetable peeler. Seed the cucumber by using the tip of a spooon to scrape out the seeds. Finely dice or grate the entire cucumber. In a bowl, combine 8 oz. of plain yogurt and add the diced cucumber to it. Stir to combine. Next, remove the paper from the garlic clove and finely mince the clove of garlic and add it to the bowl. Squeeze in the juice of 1/2 of the lemon. Be careful not to let any seeds fall in. Add the dried parsley. Stir to combine all ingredients. Taste your tzatziki and add salt and pepper to taste.
