How Do You Make Red Cabbage Italian Style?
During the fall harvest, Tuscan women take fresh produce from gardens to kitchen with grace and style. One of those wonderfully aromatic side dishes that make a meal special is a saute red cabbage. Add this dish to your holiday meal for an international flavor. It is great with veal as well as turkey. This makes a great addition to a Thanksgiving Dinner. Trim cabbage and discard bad or loose leaves. Shred cabbage into small pieces. Melt butter in a large skillet. Add cabage and mix well, coating the cabbage with the butter. Add salt and pepper to taste. Continue to stir until well mixed. Add vinegar and stir well. Cover and cook over low heat for about 45 minutes. Cabbage should appear soft. Stir in raspberry jelly. Continue to stir until jelly melts. Continue to stir while cooking uncovered until vingar has evaporated. Transfer to a bowl and serve warm. Garnish with bits of mint or dill and bacon bits.
